Rapid advancements in food chemistry and processing technologies are transforming the global food system by improving nutritional quality, safety, shelf life, and sustainability. Understanding the chemical, biochemical, and physical changes occurring during food processing and post-harvest handling is crucial for minimizing losses, enhancing functional properties, and meeting the growing demand for high-quality and safe foods.
This Special Issue of Chemical Science Review and Letters aims to showcase recent innovations and emerging trends in food chemistry, food processing, and post-harvest quality enhancement. The issue seeks to bring together interdisciplinary research that integrates chemistry, food science, biotechnology, materials science, and process engineering to address contemporary challenges in the food sector.
